Alfredo Sauce

Being pregnant...I sometimes know what I want to eat, it might be more of a NEED. So tonight I needed chicken alfredo. My noodle selection was lasagna or spaghetti. So I pulled out the spaghetti noodles and found a alfredo recipe that I didn't need to go to the store for.

Alfredo Sauce
8 oz cream cheese
3/4 cup parmesan cheese
1/2 cup butter
1/2 cup milk
In a large sauce pan, combine all ingredients. Stir constantly over medium heat until smooth.
Add a little more milk if too thick.
Toss precooked pasta lightly with sauce, coating well.
*Makes enough for 4 people.


I did have to add more milk, twice. It still wasn't enough I should have done a little more. It was a good recipe though! We all liked it! I added chicken and broccoli and my family was happy! Zoey as you can see, was a big fan!! Then again, if its pasta she'll eat it! My hubbie said he would add a little olive oil and surprise surprise some tony's seasoning :) This one was a keeper!! So easy!

Chicken Ranch Pasta

Did i mention that the picture has bacon in it? How could you go wrong with those 3 ingredients???

8 ounces penne pasta
1 Tablespoon butter
1 Tbsp flour
2 Tbsp dry ranch dressing seasoning mix
2 cups milk
1 cup shredded cheddar cheese
1/3 cup cooked, chopped bacon
2 cups cooked chopped chicken

In a large pot, cook pasta according to package directions. Drain and set aside.

In same pot melt butter. Add flour and stir. Cook flour for 1 minute. Slowly whisk in milk. Continue cooking until sauce thickens. Stir in ranch dressing mix and cheese. Stir until cheese melts. Add chicken, bacon and pasta. Stir to coat.



Well, it was yummy! I added garlic powder and onion salt. I think i didn't add enough of them both. We all still enjoyed it! I will be making this again for sure! I loved that the ingredients were things I almost always have! Yummy dinner!!

Oven cooked bacon and veggies

My hubbie and I came up with this one, it is yummy!

Lay out a long piece of foil, put bacon and any veggies you want. We like squash, zucchini, carrots, cabbage. (By we i mean me, he will eat ANYTHING!!) Add some seasoning, bet you'd never guess that I add my lovely Tony Chachere's. You won't need to add extra oil unless you aren't doing much bacon. And put it in the oven at 400 for about a half hour, Check it to see if its done. Everyone likes theirs done different so cooking time will vary. Open and enjoy!

I saw this and thought to myself....really? In the oven? Thats possible? It just so happened that i needed to be cooking 3 lbs of bacon that day for a YUMMY Broccoli salad ( i will post it next time i make it) So I figured why the heck not?

INGREDIENTS

6 strips bacon
DIRECTIONS

Preheat the oven to 350 degrees. Lay the bacon strips on a foil-lined baking sheet. Bake in the oven for 13-15 minutes, depending on your desired level of crispiness, turning over once halfway.

Remove from the oven and lay on a paper-towel lined plate to drain any excess oil.



I did do a little more than 6 strips, more like as much as i could fit on my cookie sheet :D I cooked it for 9 minutes on each side. It was perfect! Best part? I got to do other things in the kitchen and did not get splashed by super hot grease! I will for sure be doing this again!

Crockpot Garlic Brown Sugar Chicken

I don't know where i got this one from...looking through my recipes and found it. Figured hey, i like sugar and i love garlic....lets do it!



When I plan to put chicken over rice or noodles or potatoes...I like to shred it. Not something it says to do, just my own little thing. I really liked this! It was a little bit sweet, my husband wanted to add a little more soy sauce to it. But i enjoyed it and will make this again!

Brownie Cookies

Prep Time: 10 minutes Total Time: 20 minutes
Cook Time: 10 minutes Yield: 4 dozen cookies

16 ounces chocolate chips
4 tablespoons butter, softened
4 eggs
1-1/3 cups granulated sugar
2 teaspoons vanilla
1/2 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking powder

Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
Melt chocolate with butter in a saucepan over low heat, stirring constantly until smooth. Mix eggs, vanilla and sugar in medium bowl. Combine thoroughly; set aside.
Add melted chocolate to the egg mixture. Slowly add in flour, salt and baking powder. When combined and stir.
Scoop 1-1/2 tablespoons batter onto prepared cookie sheets. Bake 10-12 minutes or until firm. Let the cookies cool completely on baking sheets, then remove to an airtight container.

Well folks, I am hoping that I messed up somewhere....because I will never make these again! I follow the recipe no problem. First batch out, didn't look so great so I tried without the parchment paper, even worse! We tried them, the had a very weird taste. So i put them in a cake pan with parchment paper and that was a little bit better, but it still had that same weird taste. Try it for yourself if you'd like, please tell me how they turn out..
